What's in Your CrockPot?



Connie is having a CrockPot recipe day today! Here are a few of my favorites:

Chicken Soft Tacos

1-1½ lbs. frozen, boneless, skinless chicken breasts

14 ½ oz. can diced tomatoes

1 envelope taco seasoning

1. Place chicken breasts in slow cooker.

2. Mix tomatoes and taco seasoning. Pour over chicken.

3. Cover. Cook on low 6-8 hours. Shred chicken with forks.

4. Serve in soft tortillas.


Porcupine Meatballs

¾ lb. ground beef or ground turkey

1 cup milk

½ cup uncooked long grain rice

1 medium onion, chopped

1 cup dry bread crumbs

½ tsp. salt

Dash of black pepper

10 ¾ oz can cream of mushroom soup

½ cup milk

1. Combine meat, 1 cup milk, rice, onion, bread crumbs, salt, and pepper in bowl.

2. Shape with an ice cream scoop. Place in slow cooker.

3. Mix together soup and ½ cup milk. Pour over meatballs.

4. Cover. Cook on low 5 hours.

5. Serve with mushroom-soup gravy.

**When I have made this, the meatballs don’t usually stick together. Most of the time, I don’t bother forming them, but just throw the meat into the crock pot and pour the soup mixture on top.


Quick Lasagna

1 lb. ground beef

1 Tbsp. Italian seasoning

8 oz. package broad egg noodles

1 cup cottage cheese

½ cup mozzarella cheese

¼ cup Parmesan cheese

2 ½ cups spaghetti sauce

1. Brown ground beef in a skillet. Add 1 Tbsp. Italian seasoning. Stir.

2. Cook noodles and drain. Toss noodles with both cheeses.

3. Mix together browned beef and spaghetti sauce.

4. Spoon 1/3 of meat mixture into bottom of slow cooker.

5. Layer in ½ of noodles. Repeat layers.

6. Cover. Cook on low 5-6 hours.

**I love this recipe! I don’t usually bother doing the layers, since it all gets mixed in anyway.

Weather Chart

Karin and I talked about weather last week, so I made a weather chart for us to do each day. I just took a piece of posterboard and cut it down a bit. I glued "Today's Weather is:" on the left. Underneath, I put half of a velcro circle for the word to describe the weather as well. On the right, there is room for the symbol for the days' weather. (I used velcro for that as well.) We have sunny, cloudy, rainy, and windy. She loves doing it each morning.

Rainbow Brite Adventure Pack




I had the opportunity to review a Rainbow Brite Adventure CD ROM. Rainbow Brite is celebrating 25 years It has a bunch of games on it, as well as puzzles, a short animated video, and even coloring pages. I ended up looking at it while Karin was napping, but am planning on letting her play it some. I was pleased with it overall, and think that any child would like playing it.

I made the girls matching skirts for Valentine's Day. They were so easy...I just made them up without a pattern! With all the business of Sunday, I didn't get a picture of them wearing them. I plan to the next time.

Snow!

We got a little over 5" of snow Friday night! I think it is the first ever significant accumulation for Columbia! :) Here are some pictures....
